  Any suggestions on the best way to get from Sarajevo to the coast?
  Anyone have any experience taking the train?
  We also wanted to stop in Mostar, but we’re not sure that’s going to be possible unless we spend the night there.

  Take bus to Dubrovnik or Ploce or Split or you can take train to Ploce. It is possible to stop for few hours in Mostar for some sightseeing but you will be better off to overnight in Mostar to see the place properly.
